Perfect Potato Pockets by Pillsbury – Sabroso Saturday

A couple of weeks ago I shared a snack made with dough from a tube. This week I looked in my kitchen and saw more dough (we ran out of mini hot dogs) so it was time to check the Pillsbury website for ideas on how to use the dough we have on hand.

Nochebuena (the Latino name for Christmas Eve) and Christmas Day are all about spending time with the family, so of course there is a lot of food. The family doesn’t always help with cooking … lots of people just show up with a growly stomach, and expect to find food. I came across this recipe and thought it would be great, to disguise some leftovers after the big holiday meals (or while the main meal is finishing in the oven).

Dinner ready in 25 minutes! Mix Bac~Os® bacon flavor bits and ham with mashed potatoes and fill in Pillsbury® dinner rolls to make these cheesy sandwiches – a tasty baked meal.

Makes:  4 servings (2 pockets each)

Potato Pockets from Pillsbury
1 pouch (3.3 oz) cheddar and sour cream instant mashed potatoes
1 3/4 cups hot water
1 package (3 oz) cream cheese, softened
3/4 cup finely chopped fully cooked ham
2 medium green onions, chopped
1/4 cup Bac~Os® bacon flavor bits or chips
1/4 cup shredded Cheddar cheese (1 oz)
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
1 tablespoon butter, melted
1 teaspoon red pepper sauce
  • In large bowl, mix the mashed potatoes and hot water. Add cream cheese; beat until blended. Stir in the ham, onions, bacon and Cheddar cheese.
  • Separate crescent dough into 8 triangles. Slightly stretch corners of short side of each triangle to make longer. Place on ungreased cookie sheet. Spoon 1/3 cup potato mixture on center of each triangle. Bring corners to center over filling, overlapping ends; press gently to seal.
  • Mix butter and pepper sauce; brush over tops. Bake at 375°F 10 to 12 minutes or until golden brown.

I have to admit, in my house we probably wouldn’t have green onions available, so that might be left out and/or changed for white onions, maybe garlic. I also might use freshly crumbled bacon plus drippings, and eliminate the melted butter.
The point is, mashed potatoes plus things that taste good with mashed potatoes (this is probably the closest I’d get to making knish, except the crescent roll dough is so much flakier than what most vendors have).

  1. Its amazing that I haven’t thought of using biscuits as a meal.

    Although my boys don’t like mashed potatoes, this makes me wonder if I could fill it with rice, beans and chicken to make the meal portable.

    Would be perfect for when we’re rushing to a late service at church or an event at school, much better than fast food. Hmmmm…
